Cheese and Oatmeal Cookies




Nutritious whole wheat and oat cookies.

Preparation Time : :  5 mins.
Cooking Time : :  15 mins.
Makes 12 to 14 cookies.

Ingredients

1/2 cup butter
1/4 cup cheese spread
1 tsp cumin seeds (jeera)
1/2 tsp crushed black pepper (kalimirch)
1 cup whole wheat flour (gehun ka atta)
1/4 cup quick cooking rolled oats

Other ingredients
butter for greasing

Method

    Cream the butter and cheese spread till light and fluffy.
    Add the cumin seeds, black pepper, wheat flour and oats and knead gently into a soft dough.
    Roll out the dough into a sheet of 6 mm. (1/4") thickness. Prick with a fork at regular intervals.
    Cut out 12 to 14 circles using a 50 mm. (2") cookie cutter and place them on a greased baking tray.
    Bake in a pre-heated oven at 180°C (360°F) for 15 minutes or till the cookies are golden brown..
    Remove the cookies from the oven and allow them to cool.
    Store in an air-tight container.

Orange flavoured cookies made with whole wheat flour, oats, peanuts, chocolate chips and coconut.

Preparation Time:  10 mins.
Cooking Time :  20 mins.
Makes 2 large cookies.

Ingredients

1/3 cup butter
3 tbsp brown sugar
1/3 cup whole wheat flour (gehun ka atta)
3 tbsp quick cooking rolled oats
1/3 cup chopped dark chocolate
1 tbsp roasted unsalted peanuts, chopped
1 tbsp orange squash
1/2 tsp grated orange rind (optional)
3 tbsp dessicated coconut

Method

Cream the butter and sugar till light and fluffy.
Add the whole wheat flour, oats, dark chocolate, peanuts, orange squash, orange rind and desiccated coconut. Mix well.
  Divide the mixture into two equal portions.
  Press onto a greased baking tray to make 100 mm. (4") diameter circles.
 Bake in a pre-heated oven at 160°C (320°F) for 20 minutes or until evenly browned. Cool completely.
 Store in an air-tight container.

Tips

    You can drizzle melted white chocolate over the cookies as shown in the above picture after they are cool.
